I recently celebrated a birthday, and yes, I’m still hovering around 39. Just kidding. I’m really okay with growing older as each birthday means I have the opportunity to experience all life has to offer.
As a treat my youngest daughter Em wanted to cook dinner for hubby and me. She planned the menu and came to our house to cook a very special meal. After hauling in bags of food she went back to her car and presented me with a luscious looking cake. I was tempted to swipe my finger through the frosting and have a taste before dinner.
You might be asking yourself, “What’s the big deal? It’s a cake.” But what made this so special was it was the first time one of my daughters made me a birthday cake. When my mom lived locally she handled cake baking duties and for my kids and hubby I always make their favorites. Hubby loves a strawberry cake with white frosting, Meg is usually whipped cream cake with lemon curd filling and vanilla frosting and Em well, I never know for sure as she likes to mix it up. This year she asked for a blackberry cake.
When we sat down to our meal, we enjoyed: pineapple and shrimp kebabs, chicken, grilled endive with candied pecans with an apple glaze, and tossed salad with greens from her garden. To top it all off she made fresh BBQsaucefor hubby, and for us girls, asalsa verdewith garden fresh herbs. I had to rein myself in to save room for cake.
With the first slice I knew we were in for a treat. Moist, rich vanilla cake filled with double chocolate frosting… well let’s just say it is by far one of the best cakes I’ve ever enjoyed. Sadly, the cake plate is empty, but Em has already been informed she’s on cake duty next year too. Who says I can’t look forward to my next birthday?
